Preheat oven to 230C
Mix the dough ingredients together with spoon and quick knead
Cover with tea towel and let it sit for 10-20 minutes or up to 2 hours
Flour your surface well as this dough is sticky
Knead for a few minutes and then cut into 8 pieces
Shape each piece into a rough round shape and roll it out on heavily floured surface
Dip each side in a bowl of flour before rolling
Add tomato paste, basil and mozzarella and garlic mix to each piece
Pinch together and gently roll out again
If holes appear, pinch them together with your fingers
Place on a baking sheet with greaseproof paper and brush with oil
Bake for 7-10 minutes until puffed up
