Pizza Pitta
  1. Preheat oven to 230C

  2. Mix the dough ingredients together with spoon and quick knead

  3. Cover with tea towel and let it sit for 10-20 minutes or up to 2 hours

  4. Flour your surface well as this dough is sticky

  5. Knead for a few minutes and then cut into 8 pieces

  6. Shape each piece into a rough round shape and roll it out on heavily floured surface

  7. Dip each side in a bowl of flour before rolling

  8. Add tomato paste, basil and mozzarella and garlic mix to each piece

  9. Pinch together and gently roll out again

  10. If holes appear, pinch them together with your fingers

  11. Place on a baking sheet with greaseproof paper and brush with oil

  12. Bake for 7-10 minutes until puffed up
