Ingredients (12 muffins)
Wet
• 3 very ripe bananas, well mashed
• ½ cup honey
• ½ cup vegetable oil
• 1 large egg
• 1 teaspoon vanilla extract
Dry
• ¾ cup whole wheat flour
• ¾ cup all-purpose flour
• 1 teaspoon baking soda
• ½ teaspoon salt
• 1–1½ teaspoons cinnamon
(recommended)
Optional
• 1 tablespoon milk or water (only if batter is very thick)
• ½ cup chopped walnuts or chocolate chips

Heat oven to 350°F / 175°C. Line a muffin tin.
In a large bowl, mash bananas until nearly smooth.
Whisk in honey, oil, egg, and vanilla.
Sprinkle baking soda, salt, and cinnamon over the batter; whisk briefly.
Gently fold in the flours just until combined.
If batter feels very stiff, add 1 tablespoon milk or water.
Fill muffin cups about ¾ full.
Bake 18–22 minutes, until domed and a toothpick comes out clean.
Cool 5 minutes, then remove from pan.
