Butter Chicken
  1. Mix all marinade ingredients with chicken. Rest minimum 30 minutes

  2. Meanwhile cook onion with the 1 tbsp of ghee in a pot over medium heat 5 minutes stirring until slightly golden (add a little water if to cook if needed)

  3. Add garlic and ginger. Low heat stir for 1-2 minutes until fragrant

  4. Add garam masala, cumin, turmeric. Stir 1 minute directly into the onion mix

  5. Add crushed tomato and honey. Simmer 10-15 minutes until sauce thickens and colour deepens

  6. Add marinated chicken directly into the sauce. Stir to coat. Simmer partially covered 20-25 minutes until cooked through (add some water if too thick and taste the sauce here)

  7. Turn off heat. Stir in light coconut milk slowly. Do not boil after this

  8. Taste, adjust salt, rest 5 minutes. Serve over 150g rice/serving

  9. Split into 4 to get the macros listed above
