Heat 1 tablespoon oil in a pan. Add in 1 cup of rice & toast for 1 minute.
Add in all the spices & toast for 2 more minutes.
Add two cups of water & 1 lime juice. Bring to a boil.
Once boiling, cover with a lid, reduce heat to low and cook for 15 minutes.
After the 15 minutes, turn off the heat, LEAVE THE LID ON. Let the rice finish cooking off the heat, it will steam in the pan for another 15 minutes.
After the 15 minute steam, add in the chopped cilantro, zest of one lime & the second lime juiced. Mix & you're ready to serve!
