wash and clean all vegetables and cut into pieces, not too small, e.g. mushrooms only cut in half, peppers in 4 pieces, aubergine and courgette in thick slices, etc. Cut the cooled potatoes into quarters with the skin on.
place all the vegetables and the potatoes in a large plastic bag. Mix a marinade from the olive oil and all the spices, season to taste and pour into the bag. Close the bag tightly and mix the vegetables with the marinade by carefully moving the bag back and forth.
then place the marinated vegetables on a baking tray and bake in a preheated oven for approx. 20 minutes at 200 °C top/bottom heat until everything is crispy brown.
It goes very well with a green salad and a strong red wine.
I like to serve the oven vegetables as a side dish with a barbecue or simply as a vegetarian main course. The vegetables and spices can be varied according to taste.
