Add the cottage cheese, flour, and garlic to a bowl. Stir until a soft, sticky dough forms. If needed, add a little more flour to bring it together.
Lightly flour your surface. Press or roll the dough into a flat round shape, about ½ cm thick.
Heat a non-stick pan over medium heat. Place the flatbread in and cook for 2–3 minutes per side, until golden spots appear and the bread feels soft but cooked through.
Brush lightly with extra garlic or herbs if you like. Serve warm.
