Bring a large pot of salted water to boil. Cook the pasta until al dente, about 4-6 min. Drain it, reserving 1 ½ cups of the cooking water.
Meanwhile, heat a large serving plate in boiling water. Place the hot plate onto the work surface and add butter and pasta. Top with freshly grated parmesan and pasta water. Using a fork and spoon, gently mix the pasta. Continue to add hot pasta water from time to time while stirring and thin the sauce. Repeat this process until the cheese and butter dissolve completely and the pasta is a perfect creamy texture. When the pasta is ready, top with Parmesan cheese and serve immediately.
