Ingredients
2 large chicken breasts diced
300g orzo
750ml chicken stock
3 tbsp creme fraiche
2 tsp paprika
2 tsp oregano
3 garlic cloves
1 onion
1 tbsp olive oil
1 tbsp butter
2 tbsp Parmesan cheese
Method
Add the chicken, olive oil, 1 tsp paprika and 1 tsp oregano to a large mixing bowl and mix well.
Place a frying pan over a medium-high heat and add the seasoned chicken. Fry until golden and just cooked through stirring regularly then place to one side on a separate plate.
Meanwhile dice the onion and finely chop the garlic. Add the butter to the pan and add the onion and garlic and stir fry for a couple of minutes until the onion turns soft and garlic becomes fragrant.
Add the oregano and orzo to the pan and mix well, before pouring in the chicken stock. Reduce the heat and place a lid on the pan and simmer for 10 minutes.
Remove the lid and stir in 1 tsp paprika, and the creme fraiche. Mix well then return the. Chicken once pan and mix again then sprinkle over the Parmesan cheese to serve.
