In a large skillet, cook the ground beef over medium heat until the beef is browned and fully cooked. Drain excess grease if needed. Stir in the taco seasoning, then remove the meat from the skillet and set aside.
In the same skillet, add the uncooked rice and onion. Toast the rice, then add in chicken broth, water, Knorr Tomato Chicken Bouillon, and tomato sauce. Stir well and bring to a boil.
Reduce heat to low, cover, and simmer for 18–20 minutes, or until the rice is tender and most of the liquid is absorbed.
Once the rice is cooked, layer the taco meat evenly over the top.
Add the toppings in this order: salsa con queso, shredded cheddar jack cheese, tortilla strips, sour cream, and chipotle sauce.
Serve warm and enjoy!
