Banana Ketchup
  1. Add onion, garlic, ginger, jalpeno, oil to blender and blend until smooth. Transfer to a bowl.

  2. Add banana and all liquids, vinegar, soy sauce, fish sauce to blender. Blend until smooth. Transfer to separate bowl.

  3. Heat a Dutch oven over medium heat and add blended vegetables (caution, will spit).

  4. Sauté cook down until all moisture is evaporated.

  5. Add tomato paste and combine.

  6. Once the oil separates and has developed color, add the spices, turmeric, paprika, allspice, cayenne. Sauté and stir to combine about 1 min.

  7. Add banana mixture, stir to combine. Add brown sugar, stir to combine.

  8. Continue to let bubble until thick and reduced to about ¼. Stir occasionally.

  9. Cover and simmer 15-20 mins until desired consistency.

  10. Taste, add salt, sugar to taste
