Cowboy Butter
  1. In a bowl, beat ½ lb. softened unsalted butter with 1 Tbsp. each fresh thyme, smoked paprika, toasted ground cumin, toasted ground coriander, minced garlic, diced shallots, and chopped parsley and 2 tsp. cayenne pepper until blended.

  2. Season with salt and pepper.

  3. Wrap in plastic, pat into a sausage shape and refrigerate or freeze.

  4. Makes ½ lb.
