First, preheat your waffle maker. If you are using a Belgian waffle maker, set it to 6.
In a large bowl, mix the 1 and ½ mochiko flour, ¾ cup all-purpose flour, ¼ cup sugar, 1 and ½ teaspoon baking powder, 1 and ½ teaspoon corn starch, and ½ teaspoon salt. Set to the side.
Next, separate the 2 egg yolks from the egg whites.
In a small bowl, mix the 1 and ¼ cups whole milk, 2 teaspoons vegetable oil, 1 and ¼ teaspoon vanilla extract, and 2 egg yolks.
In a separate bowl, whip the egg whites until stiff peaks form. Set to the side.
Carefully fold the egg whites into the wet ingredients. Then fold the wet ingredients into the dry ingredients.
Use a ⅓ cup to measure the mochi waffle mix into the waffle iron. Cook for 2-3 minutes until golden and crispy.
Once cooked, top with your favorite toppings, like powdered sugar, fresh fruit, mini chocolate chips, macadamia nuts, whipped cream, and maple syrup. Enjoy!
