Sieve flour, bread soda and sugar into large bowl.
Add in the dried fruit and toss it all around.
Pour in most of the buttermilk and mix together with a knife until it all comes together.
If its not coming together or is very dry add a bit more buttermilk. Likewise if you have added a bit too much buttermilk and its very wet and sticky just add some more flour to it.
Toss it out onto a floured surface and lightly knead it just to smoothen it out.
Flip the dough over and you should have it nice and smooth on what will now be the top of the bread.
I like to cook mine in an 8in cake tin so it cooks up instead of cooking out. It can absolutely be cooked on a flat lined tray.
Score a cross in it and prod 4 holes with a knife to let the imaginary fairies escape.
Cook at 190°C for approx 50mins to an hour.
Tap the underneath when you think it's cooked and if it sounds hollow it's ready.
Pop on the kettle, slice a fine thick piece and don't be mean on the butter.
For the 'posh' way add 1 egg and 50g of melted butter to the buttermilk and make the same way as above.
