Mix gochujang, honey, soy sauce, avocado oil, garlic paste, gochugaru, salt and black pepper in a bowl
Add diced chicken thighs to the marinade and mix until completely coated
Marinate for at least 20 minutes (or a couple hours for best results)
Cook marinated chicken on a pan over medium-high heat until browned and cooked through
Turn off heat and add American cheese slices to help emulsify the sauce
Stir in blended cottage cheese and chopped green onions
Top with Monterey Jack cheese
Place under broiler until cheese bubbles and browns on top
Cook rice according to package directions
Divide chicken mixture and rice into 8 servings
Store in freezer-safe containers
Reheat in microwave for 4-5 minutes before serving
