Dice the red onion and pepper
Cook the raw chicken breast in a pan
Add the diced onion and pepper to the pan
Stir in the garlic and fajita seasoning
Pour in the passata and chicken stock
Add the mixed beans in chilli sauce and sweetcorn
Simmer until chicken is cooked through
Squeeze in the juice of half a lime
Divide into 2 portions
Top each portion with Greek yoghurt, crushed Doritos/tortillas, and sliced avocado
Garnish with fresh coriander, chilli, and jalapeños
Serve with a lime wedge
