Bloom the Gelatin: Sprinkle gelatin over cold water in a small bowl. Let it sit for 2–3 minutes until it thickens.
Dissolve the Gelatin: Pour hot green tea over the gelatin. Stir until completely dissolved.
Add Flavor: Mix in lemon juice, sweetener, or matcha if using.
Pour into Mold: Transfer the mixture into silicone molds or a small dish.
Chill: Refrigerate for at least 2 hours until fully set.
Serve: Remove from molds or cut into cubes. Serve chilled.
