Preheat the oven to 180-190°C and bake the cheesecake for 15 minutes.
Remove the cake from the oven and increase the temperature to 250°C with the grill setting on. Once the oven reaches this temperature, return the cake to the oven for an additional 3-5 minutes.
Monitor the color of the top closely during the final minutes. The cheesecake should develop a nice golden-brown crust and inflate slightly.
