Grilled Rice Paper Egg With Sweet Chili Sauce
  1. Finely chop the green onion (about 1 stalk per serving)

  2. Cut 1-2 deli ham slices into thin strips

  3. Make the sweet chili sauce by combining 1 Tbsp sriracha sauce, 1 Tbsp honey, 1 Tbsp rice vinegar, ¼ tsp soy sauce, and 1 Tbsp water

  4. Give the sauce a stir and cover with a loose lid to prevent splattering

  5. Mix ⅓ tsp cornstarch with 1 tsp water to dissolve

  6. Pour the starch paste into the sauce while still hot

  7. Turn up the heat to medium-low and let it thicken as it cools

  8. Place a sheet of rice paper in a non-stick pan without oil

  9. Add chopped green onion and make an indentation in the center

  10. Carefully crack an egg into the center

  11. Mix the egg and green onion while scrambling in a circular motion

  12. Using the back of the spatula, spread the mixture across the rice paper

  13. When the egg is almost set but still moist on top, sprinkle the ham and shredded cheese evenly over the top

  14. Cook until crispy and lightly browned on the bottom over medium heat

  15. Carefully fold it over in half, being careful not to break it

  16. Drizzle with the sweet chili sauce before folding or serve it on the side

  17. Serve immediately while the rice paper is still crispy
