Toasted flatbread

Dressing:
Preheat oven to 350°. Place the pieces of flatbread on a rimmed baking sheet. Drizzle with olive oil and toss to coat. Bake at 350° for 5 minutes or until golden and crisp.
In a serving bowl, combine the lettuce, cucumber, tomatoes, onions, pepper, radishes and arugula. Toss to combine. In a separate bowl, whisk together the dressing ingredients. When ready to serve, drizzle the dressing over the salad and toss to coat. Add the toasted bread, toss and serve.
