Pat the chicken dry & season on both sides evenly with paprika, garlic powder, pepper, salt, and dried oregano.
Over medium-high, heat 1 tbsp of clarified butter then add chicken pieces, skin side first. Sear 4-5 min each side, depending on thickness & don't move them around too much!
Lower the heat to med and cook throughly, about 5-6 more min.
Remove chicken then add garlic & shallots in the same pot, cook for 1-2 min until fragrant.
Add chicken stock to mix brown bits on the bottom of the pan into the broth, lower heat, then add in soy sauce & fish sauce.
Season pepper & salt mindfully as soy sauce & fish sauce are high in sodium (I did not add salt).
Simmer for 2-3 to mix flavours, not too long so it doesn't reduce too much.
Strain garlic & shallots for a clear broth (optional).
Serve with cooked rice, pouring broth over rice, cut up cooked chicken on top, and parsley chimichurri!
Garnish with herbs & crushed red peppers
