Add all herbs and strawberries to a saucepan with 3 cups water.
Bring to a gentle boil, reduce heat, and simmer 30–45 minutes, uncovered, until reduced to about 1 cup.
Strain the herbs well.
Let the liquid cool slightly.
Stir in 1 cup raw honey while still warm, but not hot.
Bottle and store in the refrigerator for up to 3 months.
Label and date it!
