Marinate – Mix jerk seasoning, soy, sugar, and spices with oxtail; marinate at least 2 hours or overnight.
Sear – Heat oil, brown oxtail on all sides, then add onion, garlic, and tomato paste.
Braise – Add broth and coconut milk; simmer 2½–3 hours or pressure cook 45 minutes until tender.
Prepare Broth – In another pot, combine broth, soy sauce, sweet chili sauce, vinegar, sesame oil, and brown sugar; simmer.
Cook Dumplings & Noodles – Pan-fry dumplings, steam briefly; boil noodles separately until tender.
Assemble – Layer noodles in bowls, add oxtail, dumplings, and eggs, then pour broth over.
Garnish – Top with scallions, chili slices, lime wedges, and chili crisp.
