White Christmas Rice Bubble Slice confectionery
  1. Add Copha or coconut oil to a large pan and heat till melted

  2. Take off the heat and add the chocolate and marshmallows

  3. Put back on a low heat and stir till melted and combined

  4. Take off the heat and add the salt, Rice Bubbles, craisins, pistachios and shredded coconut

  5. Stir to combine then press into a greased tin (20 x 26cm)

  6. Press flat with a spatula pressing up to all the corners

  7. Sprinkle with shredded coconut and press on

  8. Leave to cool

  9. Press out the tin and using a sharp knife, cut into 24 squares

  10. Add a final snowy sprinkle of shredded coconut before serving
