Mexican Cauliflower Rice
  1. Heat the oil in a large skillet over medium heat.

  2. When oil is hot, add the onion and jalapeno and cook, stirring often, until softened, about 5 minutes.

  3. Add the garlic and tomato paste and cook for 1 minute more.

  4. Add the cauliflower rice, cumin, and salt, and cook over medium heat, stirring occasionally, for 5 minutes or until cauliflower is as soft as you’d like.

  5. Stir in the cilantro just before serving.
