Preheat oven to 200c
Add all the chopped vegetables and potatoes to an oven proof dish
Drizzle some oil over them and season well
Roast for 45 minutes or until golden brown
In a bowl mix together the eggs, spinach, tomatoes and seasoning
Add the cooked veggies to a prepared dish
Pour over the egg mixture
Bake in the oven at 180c for 25 minutes
