Cottage Cheese Pancake Muffin Bites
  1. Preheat oven to 350°F (175°C). Lightly grease a mini muffin pan or use silicone liners for easy removal.

  2. In a bowl, whisk together cottage cheese, eggs, vanilla extract, and honey or maple syrup until mostly smooth. Add almond flour, baking powder, and salt. Stir until fully combined.

  3. Spoon the batter evenly into the mini muffin cups, filling each about ¾ full.

  4. Bake for 15–18 minutes, until the pancake bites are puffed, lightly golden, and set in the center.

  5. Allow to cool for a few minutes before removing from the pan. Serve warm or chilled with your favorite toppings.
