Tortang Talong (eggplant Omelette)
  1. Poke holes into the eggplants.

  2. Grill the eggplants for the ultimate smokey flavor.

  3. Transfer in a bowl and cover for about 5 minutes.

  4. Peel the eggplants and set aside.

  5. Beat the eggs and add salt, pepper, garlic powder and paprika. Mix together.

  6. Dip the eggplant into the egg mixture and press it down to make the eggplant wider. Cover the eggplant with the egg mixture.

  7. Fry the eggplant until each side is golden brown.

  8. Perfect with hot steaming rice and drizzle with banana ketchup.
