Miso Tantanmen (sesame Ramen)
  1. Combine tahini with miso, sesame oil, soy sauce, chilli crisp and 1 tbsp plant milk. Add lime juice, minced garlic clove and agave. Whisk until a smooth, creamy paste forms and season to taste.

  2. In a saucepan, crumble stock cube and add boiling water. Add the rest of the milk and bring to a simmer.

  3. Begin whisking, then slowly pour in the sesame base until combined. Season the broth to taste and leave to simmer on low heat, adding more water as needed.

  4. Crumble tofu into mince and season with soy, garlic, ginger, chilli crisp and red pepper flakes. Fry in hot oil until crispy, around 10 minutes.

  5. Boil corn and broccoli until tender. Toss with sesame oil and other desired seasonings.

  6. Cook noodles according to package directions. Place in bowls, ladle broth on top, add toppings and garnishes, then serve.
