Spatchcock the chicken by cutting out the backbone and laying it flat
Season the chicken heavily with salt and pepper
Preheat oven to 500°F
Place chicken skin-side down on a rack
Let chicken sit out while oven heats up for even cooking
Roast for 20 minutes skin-side down
Remove from oven and rest for 20 minutes
Flip chicken skin-side up
Roast for 20 more minutes
Remove from oven and rest for 10 minutes
Slice and serve
Note: If chicken is over 6 lbs, roast for 25 minutes each round instead of 20
