Costco Crispy Roasted Spatchcock Chicken
  1. Spatchcock the chicken by cutting out the backbone and laying it flat

  2. Season the chicken heavily with salt and pepper

  3. Preheat oven to 500°F

  4. Place chicken skin-side down on a rack

  5. Let chicken sit out while oven heats up for even cooking

  6. Roast for 20 minutes skin-side down

  7. Remove from oven and rest for 20 minutes

  8. Flip chicken skin-side up

  9. Roast for 20 more minutes

  10. Remove from oven and rest for 10 minutes

  11. Slice and serve

  12. Note: If chicken is over 6 lbs, roast for 25 minutes each round instead of 20
