Spread butter on one side of each slice of bread.
On the unbuttered side of one slice of bread, layer the Brie cheese, mozzarella cheese, and cranberry sauce. Drizzle honey over the cranberry sauce, if using. Top with the other slice of bread, buttered side out.
Heat a skillet over medium heat. Place the sandwich in the skillet and cook for 3-4 minutes on each side, pressing down slightly with a spatula, until the bread is golden brown and the cheese is melted.
Remove from the skillet and cut the sandwich in half. Serve warm.
