The Easy Apple Spoon Cake I Make Every Fall
  1. Grease an 8-inch round cake pan with cooking spray and set aside.

  2. In a bowl, stir together the diced apple, 2 tablespoons (25g) sugar, and 1 teaspoon ground cinnamon.

  3. In a medium bowl, whisk together the flour, remaining ½ cup (100g) sugar, remaining 1 teaspoon cinnamon, salt, baking powder, and baking soda. Stir in the milk and melted butter until smooth. Pour into the prepared pan. Scatter the apple pieces over the batter. Do not push the fruit down into the batter.

  4. Bake for 32 to 35 minutes, until the edges are golden brown and the center is set. Let cool for 5 minutes before spooning into bowls. Serve warm with vanilla ice cream.
