In a large mixing bowl, beat together the two eggs with sugar until bubbly, approx 2 mins
Then, whisk in the vanilla
In a sauce pan, heat butter, milk and coffee on medium low heat until all coffee granules have dissolved and butter has melted
Whisk in the hot coffee mixture into the egg sugar mixture while constantly whisking to prevent the eggs frmo being cooked
Sift and whisk in the flour and baking powder
Transfer batter to a 7 in or 8 in square baking tray lined with baking paper
Bake 32 to 34 mins, 160C, in a pre-heated oven until nicely golden brown
