Sweet n' sour tofu
Cook rice in a rice cooker. Once done, mix in rice vinegar for sushi rice!
Slice tofu. Fry both sides with oil (likely in nonstick pan) until lightly golden brown on both sides.
For the tofu glaze: Mix the ketchup, soy sauce, sugar, rice vinegar, corn starch, and water. Pour into the pan with the tofu and cook until tofu is coating and sauce is thickened.
Cut a slit into nori halfway up so that you have 4 quadrants. Assemble the sushi sandwich by building up your 4 quadrants: A) sushi rice topped with tofu and seasoning sprinkled on top B) lettuce and shredded carrot C) sprouts and cucumber, drizzled with kewpie mayo D) sliced avocado
Fold up the sandwich so that you have a square with essentially 4 layers!
