Cook bacon first until crispy, then cook mince with taco seasoning and frozen veg.
Whisk eggs and egg whites together and pour into a lined baking tray.
Top with the mince mixture and mozzarella.
Bake at 180°C / 355°F until eggs are fully cooked through.
Slice into 6 portions, load into wraps, roll into burritos and toast if you want them crispy.
