Grate the extra firm tofu
Mix grated tofu with smoked paprika, cumin, finely chopped shallot, grated garlic cloves, grated ginger, and sweet white miso paste
Prepare the slaw by combining diced avocado, diced cucumber, chopped spring onion white parts, fresh coriander or parsley, sesame seeds, lime juice, and sea salt
Cook sushi rice according to package directions
Thaw edamame beans if frozen
Assemble bowls by dividing cooked sushi rice between two bowls
Top each bowl with the tofu mixture, slaw, edamame beans, pickled ginger, and sriracha mayo
Garnish with sesame seeds
