Mix the ground chicken with the ranch seasoning mix, salt & pepper. Use your hands to mix it together then separate and roll into 8 balls.
Smash the meat balls down onto each wrap.
Spray a non stick skillet with olive oil on medium heat and place the tacos meat side down.
Keep it on this side first for 5-8 minutes until cooked then flip & do the same on the other side.
Prepare the Caesar dressing by mixing all of the ingredients together until smooth.
Cook the chicken bacon, then crumble.
In a medium bowl, combine the lettuce with enjoy dressing to coat lightly.
Once the tacos are cooked, spread a small amount of the dressing on the chicken, then top with dressed lettuce, crumbled bacon, drizzle of remaining dressing & parmesan.
