  1. Heat olive oil over medium-low.

  2. Add garlic, cook 30 seconds (no browning).

  3. Add smoked paprika + chili flakes, stir 10 seconds to bloom.

  4. Add crushed tomatoes and salt.

  5. Simmer 12–15 minutes until slightly thick.

  6. Stir in vinegar at the end. Taste and adjust.
