Tie bows around glass stems
In a shaker, combine 6 oz vodka, 2 oz pear liqueur, and 1 oz rosemary syrup
Shake with ice
Strain into chilled glasses
Top with brut champagne
Garnish with sugared rosemary
To make rosemary syrup: combine 3 rosemary sprigs, 1 cup sugar, and 1 cup water
Bring rosemary syrup mixture to a low boil, stirring occasionally
Strain rosemary syrup and let cool
To make sugared rosemary: coat rosemary in simple syrup
Sprinkle coated rosemary with sugar
Refrigerate sugared rosemary for 15-20 minutes
Repeat coating process as necessary for desired coating
