In a medium bowl, mix together the Greek yogurt, grated cucumber, garlic, lemon, olive oil, and salt. Transfer the tzatziki into a serving bowl and drizzle with a little more olive oil on top.
Brush both sides of the pitas with some olive oil. Heat a medium skillet over medium-high heat. Working in batches, cook the pitas until golden brown, 1-2 mins per side.
Cut the pitas into wedges and serve warm with the tzatziki.
