Assemble burritos by filling each tortilla with the egg mixture, cooked sausage, diced vegetables, and mozzarella cheese
Wrap burritos tightly and place on a sheet pan
Spray with avocado oil and bake according to preference
Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months
To reheat from fridge: unwrap, wrap in paper towel, and microwave for 1-2 minutes, flipping halfway
To reheat from freezer: thaw overnight if possible, then microwave for 2-3 minutes, or reheat in oven at 350°F for 15-20 minutes
