Cookie layer (above is brownie layer)
Bake the sweet potatoes until soft. Peel and mash them with the cacao powder, oat flour, vanilla, baking powder, maple syrup, and salt until combined.
Add all cookie ingredients to a food processor and blend until a cookie dough forms. Stir in chocolate chips if using.
Spread the brownie mixture into an oven-safe dish. Top with the cookie dough mixture.
Bake at 180°C for 30–40 minutes until set and golden on top
