Beef & Vegetable Cannelloni
  1. In a pot, heat olive oil and add crushed garlic, chopped onion, chopped celery, and grated carrot. Cook for 5 minutes until onions have softened.

  2. Add 500g of beef mince and cook for 5 minutes, breaking up the meat as it cooks until browned.

  3. Stir in a 500g jar of tomato pasta sauce, 2 tablespoons of Worcestershire sauce, salt, and pepper. Reduce heat and simmer for 10 minutes until sauce has thickened.

  4. Grease a baking dish and spread half of the remaining tomato sauce on the bottom.

  5. Take the lasagne sheets and place about ⅓ cup of the meat mixture along one edge, then roll up the sheet to form a cannelloni. Place the rolled cannelloni seam-side down in the baking dish.

  6. Spread the remaining ricotta cheese over the top of the cannelloni, then pour the remaining tomato sauce over the top and sprinkle with the grated cheddar cheese.

  7. Cover loosely with foil and bake at 180°C for 30 minutes. Remove foil and bake for another 30 minutes until golden brown and bubbling.
