  1. shred one small cabbage, (optional) dice two apples, dice 3-4 small persian cucumbers, cut up 2 green onions, and add them all to a bowl

  2. for the dressing blend ¾ of a block of tofu, a handful of spinach, handful of basil, ½ cup cashews, ¼ cup olive oil, juice from 1 & ½ lemons, ½ avocado, 1 tbsp Dijon mustard, 1 tsp salt, pinch of pepper, and (optional) mint (if u omit the apples, i’d recommend omitting the mint as well)

  3. pour the sauce into the salad and mix thoroughly

  4. serve with chips / crackers or eat alone
