Slice lengthwise and pat dry.
Sauté scallions and spinach.
Season and sauté mushrooms.
Combine breadcrumbs, parmesan, herbs, spices.
Coat zucchini slices fully with the mixture.
Layer zucchini, spinach, mushrooms, cheese; repeat.
Finish with crust and cheese.
Bake for 30 minutes.
Let set 10 minutes before slicing.
