Mushroom And Spinach Zucchini Lasagna Loaf
  1. Heat to 350°F and line loaf pan.

  2. Slice lengthwise and pat dry.

  3. Sauté scallions and spinach.

  4. Season and sauté mushrooms.

  5. Combine breadcrumbs, parmesan, herbs, spices.

  6. Coat zucchini slices fully with the mixture.

  7. Layer zucchini, spinach, mushrooms, cheese; repeat.

  8. Finish with crust and cheese.

  9. Bake for 30 minutes.

  10. Let set 10 minutes before slicing.
