Loaded Christmas Dipping Oil
  1. Finely chop the dried cranberries and dried figs.

  2. Shell the pistachios. Rub off as much of the skins as you can, then finely chop them.

  3. Finely chop the sweet grilled peppers.

  4. Finely grate the Parmesan.

  5. Pick the rosemary and thyme leaves off their sprigs, then finely chop them.

  6. Zest the orange.

  7. Pour the oil into a shallow bowl.

  8. Add all the chopped and grated ingredients with a generous pinch of sea salt and chilli flakes.

  9. Gently stir to mix.

  10. Drizzle over the balsamic vinegar and honey.

  11. Serve with chunks of focaccia for dipping and scooping.
