In a large bowl, mix all of the dry ingredients together.
Add the egg and mix until a sticky dough forms.
On the stove or in a deep fryer, heat the coconut oil to 375°F.
Drop balls of dough into the oil 4 or 5 at a time.
Allow the dough to brown on one side then rotate to the other side.
Cooking will take approximately 2 minutes per side.
Remove the fritter from the oil and set on paper towels to drain excess oil.
In a small bowl combine the lemon juice and Confectioners Swerve. Mix thoroughly until smooth.
Dip cooled fritters in icing and serve.
