Homemade Oyster Sauce Recipe
  1. In a small pot with oil, add spring onion and garlic, fry for 1 min on medium heat.

  2. Add oysters, brine and water, bring to a gentle simmer, add seasonings and taste, adjust if need. Simmer for 5-10min on low.

  3. Strain and reserve bits (perfect as a side dish or in a stir fry with vegetables.

  4. Pour the liquid back to the pot and bring to a simmer, add thickening slurry and turn off the heat. Stir and allow to cool. Bottle or jar and keep in the fridge, good for a month.
