The Maple-Smoked Turkey & Duck Fat Maillard Press
  1. Preheat Appliance: Initialize the panini press to 375°F (or 'Medium-High').

  2. Turkey Infusion: In a small mixing bowl, toss the 100g of Turkey Breast with the 1 tsp of maple syrup and 2 drops of maple smoke liquid until evenly coated.

  3. Crust Preparation: Using a pastry brush, apply the 1 tbsp of melted duck fat evenly to the exterior sides of both bread slices to ensure a shatteringly crisp Maillard crust.

  4. Interior Flavor Build: Spread the 1 tsp of garlic flower paste evenly across the interior side of the bottom slice of bread.

  5. Structural Layering: Layer the ingredients in this exact order on the bottom slice: 30g Mozzarella (base adhesive layer), 100g Infused Turkey Breast (folded to trap heat), 15g Shaved shallot, 30g Sweet & spicy pickle chips (blotted completely dry), Freshly ground black pepper, 30g Mozzarella (top adhesive layer), Top slice of bread (duck fat side facing out).

  6. Execution: Place the assembled sandwich onto the preheated panini press. Close the lid with firm, even pressure. Cook for 4 to 6 minutes, until the bread is deeply golden brown and the internal mozzarella has completely liquefied.

  7. Micro-Vinaigrette: While the sandwich compresses, toss the 15g of Folia greens with the 1 tsp grapeseed oil, ½ tsp apple cider vinegar, and a pinch of Kosher salt to emulsify.

  8. Post-Press Insertion: Remove the panini from the press to a cutting board. Working quickly while the cheese is still molten, gently lift the top slice of bread and insert the dressed Folia greens. Replace the top slice.

  9. Finishing & Plating: Immediately sprinkle the hot exterior crust with a pinch of Fleur de sel. Slice on a bias and serve immediately alongside the 200g portion of Summer Fresh 7 Grain Salad.
