Combine soy sauce, sugar and garlic in a jug.
Heat a wok or large, deep frying pan over medium-high heat. Add chilli oil and pork. Stir-fry, breaking up pork with a wooden spoon, for 5-6 minutes or until pork is browned. Add broccoli and stir-fry for 1 minute or until starting to soften.
Pour soy mixture into the wok and stir-fry for 1 minute or until combined. Add noodles and toss until well combined and heated through.
Sprinkle the stir-fry with shallots and drizzle with extra chilli oil, to serve.
