Slow Cooker Sweet Potato & Chickpea Curry
  1. Add the sweet potato, onion, garlic cloves, red pepper, chickpeas, tin of tomatoes, coconut milk light and the curry powder to the slow cooker pot

  2. Cook on high heat for 4 hours or 8 hours on low

  3. 5 minutes before serving add in the spinach

  4. Serve with 125g basmati rice and chopped chillies if desired
